"I conceived the idea to write this book at a precise time and place, specifically in front of a beer in a bar on Dunlop Street in Singapore. It was 2006, and I had just returned from an infernal trip around Flores Island in Indonesia. I had been collecting recipes for three years during my trips through Asia, without knowing for sure what to do with them. Between sips, I thought about two things: that it would be good to put them together in a book and that, in reality, my knowledge of Southeast Asian cuisine was still limited.
